How To Make Zucchini Noodles (Zoodles)
I have to admit, I was scared at the thought of swapping my beloved pasta for a vegetable, but Zoodles AKA, zucchini noodles are honestly the tastiest way to cut down your carb intake. They also make an excellent gluten free alternative to pasta.
Although, there are so many tools and contraptions out there, if you are just starting out I would highly recommend buying a handheld spiraliser. Don't invest in something more expensive until you are sure you will use it regularly.
There are many ways you can cook your zucchini noodles. You can have them raw, but I prefer them a little softer like pasta.
Load your zoodles into a microwave-safe bowl and cook for 1 minute in two lots of 30 second increments. This prevents overcooking the zucchini.
My favourite method is sautéing. Add a tablespoon of olive oil to a pan and saute for around 2-3 minutes. I also like to add some salt and pepper for extra flavour. Let the zoodles drain on some paper towel before serving to get rid of any excess oil.
Another way is to boil your zoodles. Just place them in a boiling pot of water and cook for around a minute. Strain the zoodles before serving.
