Quick And Easy Vegetable Bake The Whole Family Will Love
Struggling to get the kids to eat vegetables? Sick of boring old steamed carrots and broccoli? Or do you just have a bunch of random vegetables in the fridge with no use? Whatever the situation, this easy vegetable bake is so easy, incredibly tasty, and can be enjoyed for days to come.
While I used these vegetables, you can use as little or as many different vegetables you like!
Roast vegetable seasoning
1. Throw the harder vegetables into a baking dish (potato, sweet potato, onion, garlic etc.), drizzle with olive oil, and top with roast vegetable seasoning. Cook in the oven at around 180°c or 160° fan forced for around 15 minutes
2. Add remaining ingredients, (aside from soft ingredients such as spinach and cherry tomatoes), some more seasoning, and olive oil, cooking for a further 10 minutes
3. Add spinach, cherry tomatoes and feta and cook for 3 more minutes
It really is as simple as that!
